TryOne of my Fav Recipe =)San Giacomo{serves two}{Antony`s Recipe}Pan sautéed scallops on red onion marmalade
18og king scallops
1oog thinly sliced red onion
2og sugar2g oregano
1 baby leaf
2 pepper
2og olive oil
5g extra virgin olive oil
1og butter
Salt
Heat a casserole dish add half the olive oil a long with the butter, onion, salt, pepper, oregano, sugar and baby leaf. Cook the onions slowly until they become soft and translucent. Set a aside and keep warm. Then heat a separate pan, add the remaining olive oil and sauté the scallops on both sides, seasoning with salt and pepper.
Set the onions in three small portions for each plate place the scallops on top and pour all over the extra virgin olive oil.
Serve garnished with fresh herbs.
